To delight guests with show-stopping desserts, viennoiserie, and breads, we are recruiting a creative Sous Chef – Pastry to support the Pastry Chef in leading day-to-day production across multiple outlets and banqueting operations.
Job Description
The Sous Chef – Pastry manages mise-en-place, mentors a talented pastry brigade, and ensures every creation meets Gewan’s exacting standards of flavour, artistry, and consistency.
Key Responsibilities
- Oversee daily preparation of plated desserts, buffets, breads, viennoiserie, chocolate work, and amenities.
- Enforce recipe accuracy, portion control, and presentation guidelines.
- Train and schedule pastry cooks and bakers; conduct skill-building workshops.
- Control food costs via smart purchasing, stock rotation, and waste reduction.
- Uphold HACCP and Gewan hygiene protocols in pastry and bakery areas.
- Collaborate on menu development, seasonal promotions, and special events.
- Maintain pastry equipment and coordinate with Stewarding for cleanliness.
- Act as Pastry Chef-in-charge during their absence.
Requirements
- Minimum 4 years’ experience as Senior Chef de Partie / Sous Chef in luxury-hotel pastry kitchens or high-end patisseries.
- Strong skills in classic and modern pastry, chocolate, sugar art, and artisan breads.
- Proven ability to lead, train, and motivate multicultural teams.
- Solid grasp of cost control, inventory management, and production planning.
- Thorough knowledge of food-safety regulations and allergen management.
