To deliver artisan breads and impeccable baked goods across our restaurants, cafés, and banqueting venues, we are seeking a skilled Sous Chef – Bakery to support the Pastry Chef and lead a dedicated bakery team.

Job Description

The Sous Chef – Bakery supervises daily bread and viennoiserie production, maintains product consistency, and mentors bakers to meet Gewan’s exacting standards of quality, texture, and presentation.

Key Responsibilities

  • Oversee preparation of artisan loaves, rolls, sourdough, viennoiserie, gluten-free options, and specialty breads.
  • Ensure accurate fermentation, proofing, baking, and cooling processes for consistent results.
  • Train, schedule, and motivate bakery staff; conduct workshops on new techniques and recipes.
  • Manage ingredient sourcing, cost control, inventory rotation, and waste reduction.
  • Uphold HACCP and Gewan hygiene protocols, ensuring full compliance in the bakery.
  • Collaborate on menu engineering and seasonal bread concepts for F&B outlets and events.
  • Monitor equipment upkeep (ovens, mixers, proofers) and coordinate with Stewarding on cleanliness.
  • Act as bakery-in-charge in the Pastry Chef’s absence.

Requirements

  • 4 + years’ experience as Senior Baker or Sous Chef – Bakery in luxury hotels, resorts, or premium bakeries.
  • Mastery of classic and modern bread-baking methods, sourdough starters, viennoiserie, and laminated dough.
  • Proven ability to lead and develop a multicultural bakery team.
  • Strong track record in cost control, inventory management, and production planning.
  • Thorough knowledge of food-safety regulations and allergen management.
  • Creative mindset, meticulous attention to detail, and resilience in high-volume environments.
