Job Description
As Chef de Partie – Pastry, you will oversee production of plated desserts, petit-fours, viennoiserie, and buffet items for restaurants, lounges, and events. You will lead a small team, ensure recipe accuracy, and deliver consistent flavour, texture, and presentation.
Key Responsibilities
- Produce and plate desserts, cakes, tarts, pastries, and viennoiserie to recipe and presentation specs.
- Organise daily mise-en-place, verifying freshness and proper storage of ingredients.
- Train and supervise Demi CDPs and Commis in pastry techniques, chocolate work, and sugar art.
- Control food costs through portion management, stock rotation, and waste reduction.
- Uphold HACCP and Gewan hygiene protocols, maintaining an immaculate pastry kitchen.
- Collaborate with the Pastry Sous Chef on menu development, seasonal specials, and showpieces.
- Maintain pastry equipment and report maintenance needs promptly.
Requirements
- 3 + years’ experience as Demi CDP or Chef de Partie in luxury-hotel pastry kitchens or premium patisseries.
- Solid skills in classic and modern pastry, chocolate tempering, and laminated dough.
- Proven ability to lead and motivate junior pastry staff.
- Strong grasp of cost control, inventory management, and production planning.
- Meticulous attention to detail, creative flair, and ability to perform under pressure.
