We are assembling a high-calibre culinary brigade and seek an accomplished Chef de Partie – Hot Kitchen to take charge of a key station, ensuring every dish meets Gewan’s exacting standards of flavour, presentation, and consistency.
Job Description
The Chef de Partie – Hot Kitchen leads a designated section (grill, sauté, sauce, or similar), manages mise-en-place, and mentors junior chefs to deliver consistently outstanding dishes during à-la-carte, buffet, and banquet service.
Key Responsibilities
- Prepare and cook menu items in your station, adhering to recipe specs and plating guidelines.
- Ensure readiness of mise-en-place and coordinate smooth service with other kitchen sections.
- Train, guide, and evaluate Demi CDPs and Commis chefs assigned to your station.
- Control food costs through portion management, stock rotation, and waste reduction.
- Uphold HACCP and Gewan hygiene protocols throughout production and storage.
- Collaborate with the Sous Chef on specials, menu development, and quality checks.
- Maintain equipment and work areas, reporting maintenance needs promptly.
Requirements
- 3 + years’ experience as Demi CDP or Chef de Partie in luxury hotels or high-end restaurants.
- Strong command of hot-kitchen techniques (grill, sauté, roasting, sauce work).
- Proven ability to work under pressure while maintaining meticulous standards.
- Solid understanding of food-safety regulations and HACCP.
- Organised, proactive, and committed to continual improvement.
- Flexibility to work varied shifts, including weekends and public holidays.
