To craft vibrant salads, appetizers, and buffet displays that define our culinary identity, we are recruiting an accomplished Chef de Partie – Garde Manger to lead a key cold-kitchen station and uphold Gewan’s signature standards.

Job Description

As Chef de Partie – Garde Manger, you will manage a dedicated cold-kitchen section, preparing salads, canapés, terrines, charcuterie, and showpieces while mentoring junior chefs to ensure consistent quality, flavour, and presentation across à-la-carte, buffet, and banquet service.

Key Responsibilities

  • Produce and plate salads, cold starters, dressings, terrines, and buffet décor to recipe and presentation specs.
  • Organise daily mise-en-place, ensuring ingredients are fresh, labelled, and temperature-controlled.
  • Supervise and train Demi CDPs and Commis chefs in cold-kitchen techniques, knife skills, and HACCP.
  • Monitor portion sizes, minimise waste, and assist with stock rotation and ordering.
  • Uphold Gewan hygiene standards and maintain meticulous workstation cleanliness.
  • Collaborate with the Sous Chef on menu engineering, seasonal specials, and live cold stations.
  • Maintain equipment and report maintenance needs promptly.

Requirements

  • 3 + years’ experience as Demi CDP or Chef de Partie in luxury hotels, resorts, or high-end catering, focused on garde-manger.
  • Strong knowledge of cold-kitchen production, charcuterie basics, and artistic buffet presentation.
  • Proven ability to lead and motivate junior team members in a high-volume environment.
  • Sound understanding of HACCP, food safety, and allergen management.
  • Organised, creative, and calm under pressure, with keen attention to detail.
