To offer guests exceptional artisan breads and viennoiserie, we are recruiting a skilled Chef de Partie – Bakery to run a key bakery station and uphold Gewan’s exacting standards of quality, texture, and consistency.
Job Description
The Chef de Partie – Bakery produces a full range of breads, rolls, sourdough, brioche, croissants, and laminated doughs. You will manage daily mise-en-place, supervise junior bakers, and ensure every product meets precise specifications.
Key Responsibilities
- Prepare artisan loaves, breakfast breads, viennoiserie, and specialty items to recipe and presentation standards.
- Oversee proofing, baking, cooling, and storage processes, ensuring consistent results.
- Train and guide Demi CDPs and Commis in bread-making and lamination techniques.
- Monitor ingredient quality, portion control, and stock rotation to minimise waste and control costs.
- Enforce HACCP and Gewan hygiene protocols within the bakery.
- Collaborate with the Pastry Sous Chef on seasonal bread concepts and buffet displays.
- Maintain bakery equipment and promptly report maintenance needs.
Requirements
- 3 + years’ experience as Demi CDP or Chef de Partie in luxury-hotel bakeries, resorts, or premium artisan bakeries.
- Mastery of classic and modern bread-baking methods, sourdough starters, and laminated doughs.
- Proven ability to lead and motivate junior staff in a high-volume environment.
- Strong understanding of cost control, inventory management, and production planning.
- Meticulous attention to detail, creativity, and resilience under pressure.
