Role Overview
Reporting to the Cost Controller, the Assistant Cost Controller monitors daily F&B and operating-supplies costs, audits receiving and storeroom procedures, and provides actionable insights that keep food-cost, beverage-cost, and inventory variances on target.
Key Responsibilities
- Receiving & Storeroom Audits
- Verify deliveries against purchase orders, weights, and quality standards; ensure proper documentation and pricing.
- Inventory Management
- Conduct monthly and surprise stocktakes for all outlets and central stores; investigate variances and suggest corrective actions.
- Cost Tracking & Reporting
- Update recipe cards in the cost-control system, calculate theoretical vs. actual costs, and prepare daily flash reports.
- Issue & Transfer Control
- Monitor requisitions, internal transfers, and spoilage write-offs to protect inventory integrity.
- Systems & Data Integrity
- Maintain item master data and unit costs in the ERP / POS back-office; assist with menu-engineering analyses.
- Compliance & Best Practice
- Support HACCP, FIFO, and portion-control checks in cooperation with Culinary and Stewarding teams.
- Month-End Support
- Compile cost journals, wastage reports, and cost-of-sales schedules for the Finance Manager.
Requirements
- 2 + years’ experience in cost control, storekeeping, or F&B accounting within a four- or five-star hotel.
- Good understanding of local supplier practices.
- Proficiency with inventory/POS & cost-control software (e.g., Sun/FBM, MC, Adaco) and strong MS Excel skills.
- Sound knowledge of recipe costing, yield tests, and basic accounting principles.
- Detail-oriented, numerate, and able to meet tight reporting deadlines.
- Diploma/degree in Accounting, Finance, or Hospitality Management preferred.
