Role Overview
Support the Chef de Partie in daily prep and service—owning mise-en-place, quality, and hygiene across your assigned section (hot, cold, or pastry) to deliver consistent five-star dishes.
Key Responsibilities
- Produce section mise-en-place to recipe, portion, and presentation standards.
- Cook and plate during service with speed and accuracy; communicate effectively on the pass.
- Label/date, store, and rotate food correctly (FIFO); maintain temperature and cleaning logs.
- Keep workstation and equipment spotless; follow opening/closing and deep-clean schedules.
- Assist with receiving, checking quality/weights, and proper storage of deliveries.
- Minimise waste; support monthly stock counts and yield/cost control initiatives.
- Comply with HACCP, allergen procedures, and personal hygiene at all times.
Requirements
- 1–2 years’ experience as Commis (hotel or quality restaurant); ready to step up to Commis II responsibilities.
- Sound knife skills and fundamentals across hot/cold/pastry (section assignment based on experience).
- Strong teamwork, time management, and attention to detail in a high-volume environment.
- Physically fit; comfortable with hot/cold conditions and standing for long periods.
- Good command of English for kitchen communication; additional languages are a plus.
- Flexibility for shifts, weekends, and public holidays.
- Culinary diploma/certificates preferred; immediate joiners preferred.
