Role Overview

Support the Chief Steward in leading stewarding operations across all kitchens, outlets, IRD, and banquets—delivering immaculate cleanliness, hygiene (HACCP), equipment readiness, and smooth BOH service flow.

Key Responsibilities

• Supervise dishwashing/pot-wash operations and BOH cleaning; ensure opening/closing checklists are completed.
• Enforce hygiene standards: chemical handling (SDS), PPE, sanitation logs, temperature checks, and waste segregation.
• Plan and follow up on deep cleans (hoods, ovens, cold rooms, grease traps) with Culinary/Hygiene teams.
• Maintain OS&E par levels (chinaware, glassware, silverware, kitchen smalls); manage storage, circulation, breakage, and month-end counts.
• Monitor and coordinate maintenance for rack/flight machines and pot washers; raise and track work orders.
• Train, roster, and coach stewards; conduct toolbox talks and on-the-job coaching.
• Provide stewarding support for banquets/events and peak periods to ensure timely equipment circulation.
• Prepare daily shift reports and handovers; uphold grooming and safety standards.

Requirements

• 3+ years’ stewarding experience in a 4/5-star hotel/resort; at least 1 year in a supervisory/assistant role.
• Strong knowledge of HACCP, sanitation procedures, and chemical safety.
• People leadership, delegation, and time-management skills in high-volume operations.
• Physically fit; comfortable with fast pace and BOH tasks.
• Good command of English; confident communicator across teams.
• Flexibility to work shifts, weekends, and public holidays.
• Priority will be given to candidates who are available to join immediately.
