Role Overview
Lead the Stewarding department to deliver impeccable cleanliness, hygiene, and equipment readiness across all kitchens, outlets, IRD, banquets, and back-of-house—supporting flawless F&B operations while controlling OS&E costs and upholding HACCP standards.
Key Responsibilities
- Own dishwashing and pot-wash operations; set SOPs, opening/closing checklists, and par levels.
- Enforce HACCP, chemical handling (SDS), PPE, sanitation logs, temperature checks, and waste segregation.
- Plan and supervise deep cleans (hoods, ovens, cold rooms, grease traps) with Culinary & Hygiene teams; close corrective actions.
- Manage OS&E inventory (chinaware, glassware, silverware, kitchen smalls): storage, circulation, breakage control, month-end counts.
- Ensure machines (rack/flight dishwashers, pot washers, conveyors) are operated correctly; raise and track Engineering work orders.
- Roster, train, and coach stewards; conduct toolbox talks and performance reviews.
- Provide stewarding support for banquets/events; coordinate timely equipment turnarounds at peak times.
- Monitor budgets, cost targets, and chemical consumption; produce daily/weekly reports and handovers.
Requirements
- 5+ years’ stewarding experience in a 4/5-star hotel or resort, including 2+ years in a supervisory/assistant chief role.
- Strong knowledge of HACCP, sanitation procedures, and chemical safety; audit mindset and documentation discipline.
- Proven people leadership in high-volume operations; calm, organised, and hands-on.
- Working knowledge of dishwashing systems, OS&E control, and basic inventory/cost tracking (Excel).
- Good command of English; confident communicator across multicultural teams.
- Flexibility to work shifts, weekends, and public holidays; physically fit for BOH tasks.
