Role Overview
Support the Executive Chef in leading stewarding operations across all kitchens, outlets, IRD, and banquets—ensuring impeccable cleanliness, hygiene (HACCP), equipment readiness, and smooth back-of-house service flow.
Key Responsibilities
- Oversee daily production and service in all kitchens; ensure recipes, plating, timing, and portion control meet brand standards.
- Coach, roster, and develop Chefs de Partie/Demi/Commis; deliver on-the-job training and performance reviews.
- Partner on menu engineering, tastings, seasonal updates, themed/event menus, and accurate recipe costing.
- Control cost of sales via smart purchasing, yield tests, portioning, and waste reduction; monitor inventories and variances.
- Enforce HACCP/food-safety, allergen control, cleaning regimes; lead internal hygiene inspections and corrective actions.
- Coordinate with Stewarding & Engineering for equipment care, maintenance, and kitchen readiness.
- Translate BEOs into flawless banquet execution; ensure smooth inter-department coordination.
- Produce daily production plans, requisitions, and kitchen reports; act as Chef-in-Charge in the Executive Chef’s absence.
Requirements
- 3+ years’ stewarding experience in a 4/5-star hotel; 1+ year in a supervisory/assistant role.
- Strong knowledge of HACCP, sanitation procedures, and chemical safety.
- People leadership, task delegation, and time-management skills in high-volume operations.
- Physically fit; comfortable with fast pace and repetitive tasks.
- Good command of English; confident communicator across teams.
- Flexibility to work shifts, weekends, and public holidays.
