Role Overview
Second-in-command to the Executive Chef, the Executive Sous Chef leads day-to-day kitchen operations across restaurants, bars, IRD, and banqueting—driving food quality, consistency, team performance, and cost control while upholding HACCP standards.
Key Responsibilities
- Oversee daily production and service in all kitchens; ensure recipes, plating, timing, and portion control meet brand standards.
- Coach, roster, and develop Chefs de Partie/Demi/Commis; deliver on-the-job training and performance reviews.
- Partner on menu engineering, tastings, seasonal updates, themed/event menus, and accurate recipe costing.
- Control cost of sales via smart purchasing, yield tests, portioning, and waste reduction; monitor inventories and variances.
- Enforce HACCP/food-safety, allergen control, cleaning regimes; lead internal hygiene inspections and corrective actions.
- Coordinate with Stewarding & Engineering for equipment care, maintenance, and kitchen readiness.
- Translate BEOs into flawless banquet execution; ensure smooth inter-department coordination.
- Produce daily production plans, requisitions, and kitchen reports; act as Chef-in-Charge in the Executive Chef’s absence.
Requirements
- 5+ years’ progressive culinary leadership in upscale/luxury hotels, covering high-volume à la carte and banqueting.
- Current experience as Executive Sous Chef (or a strong Sous Chef ready to step up).
- Proven record in team development, menu engineering, and food-cost control.
- Deep knowledge of HACCP and food safety (Level 3/4 preferred).
- Strong organization, communication, and calm decision-making under pressure.
- Proficient with kitchen costing/inventory systems and MS Office.
- Excellent command of English; flexibility for shifts, weekends, and public holidays.
