About the Hotel
Royal M Al Aqah Beach Resort is a 5-star beachfront retreat on Fujairah’s Al Aqah coast, set between the Arabian Sea and the Hajar mountains, with a private beach, infinity pool, kids’ zone, spa & wellness centre, state-of-the-art fitness, watersports, and multi-cuisine restaurants & bars, plus conference rooms and a ballroom.
Role Overview
Own the hotel’s Food Safety Management System (FSMS). Lead HACCP implementation, hygiene compliance, and food-handler training across all kitchens, bars, stores, IRD, and banquet operations—meeting UAE regulatory and Gewan brand standards.
Key Responsibilities
- Maintain and continually improve the HACCP-based FSMS: hazard analysis, CCPs, monitoring records, verification, and CAPA.
- Conduct daily/weekly hygiene inspections of production, pastry, butchery, cold kitchen, bars, receiving, and stores; issue action plans.
- Verify temperature control at receiving, storage, preparation, cooking, hot/cold holding, cooling, and reheating; manage probe calibration.
- Manage supplier approval and receiving checks (temperatures, transport hygiene, packaging integrity); keep the approved supplier list current.
- Oversee personal-hygiene compliance, uniforms, hand-washing, and illness reporting; maintain the food-handler training matrix.
- Coordinate cleaning & disinfection programs, chemical safety (SDS), dishwashing verification, and ice/water quality checks.
- Lead allergen management, labelling/date coding, FIFO/traceability, and mock product-recall drills.
- Trend and control pest activity with the contractor; document preventive actions.
- Prepare for internal/external audits; liaise with local municipality authorities; investigate food complaints or suspected FBIs with root-cause analysis and reports.
- Compile weekly/monthly hygiene KPI reports for Culinary & Finance (non-conformities, closures, training hours, swab results).
Requirements
- Diploma/degree in Food Science, Microbiology, Nutrition, or Hospitality.
- 3+ years in food safety/hygiene roles within a 4/5-star hotel or high-volume F&B operation.
- HACCP Level 3/4 required; PIC (Person-in-Charge) and ISO 22000/FSMS Internal Auditor certifications are advantages.
- Strong knowledge of UAE food-safety regulations and local municipality requirements.
- Excellent auditing, documentation, and training skills; solid MS Excel/Word/PowerPoint.
- Good command of English; clear communicator across multicultural teams.
- Flexibility for operational timings and emergency call-outs.
